Why Our Order Cutoff Is Thursday at 7:00 PM

How the weekly baking schedule works at a Sorrento, FL home bakery and why the Thursday-night preorder cutoff exists.

Orders close Thursday at 7:00 PM Eastern. That deadline is the hinge the entire week turns on.

Thursday night we total the orders and build the mix schedule. Flour gets weighed, starter gets its final feeding, and inventory gets locked so nothing is promised twice.

Friday is mixing, bulk fermentation, and shaping. Doughs go into a cold retard overnight — the long, slow stretch that develops the flavor you actually taste.

Saturday morning is baking, in batches, starting early. Cinnamon rolls get iced warm. Cookies come out last so they're at their best at pickup.

Move the deadline any later and something in that chain gets rushed. We'd rather tell you 'next weekend' than hand you a loaf that didn't get its time.
